Ali Shan, Taiwan
Ali Shan is a mountainous township within Chiayi County, Taiwan. Located on the
western coast of the island, it is home to Mount Ali, a region in Chiayi that
emcompasses approximately 25 individual peaks that extend up to an elevation of
over 7,000 feet. It is here that the famous high mountain oolongs originate.
These high elevations and extreme conditions that result in hardier teas that
have a higher concentration of flavor. With lower temperatures and less sunlight
the growth of the leaf is stunted, concentrating the nutrients and producing a
much more complex flavor.
